Okay bit of a salmon theme going here, I promise there will be recipes without salmon! But first this one...
When my vegan flatmate saw this quiche he said 'that looks like the best quiche ever made' and I know his hungry little vegan tummy was thinking about turning for this quiche...
It has potatoes it in, and feta. But these can be subbed for those on zee diet.
Ingredients: Butter, 1 leek, 3-4 cloves garlic, 6-8 mushrooms, 1 smoked salmon steak, 1/2 block feta (optional), 5 eggs, 4-5 medium sized potatoes (or courgettes and egg plant), 1tsp thyme, 1 tsp stock, 1 cup milk (oat, almond, whatever you drink), roasted sunflower seeds.
Method: Slice your potatoes into thick slices, about 8mm to be precise. Boil these guys until they are edible, but not soft.
(If you are going to use courgetts and eggplant instead, slice the courgies length ways, and the eggplant across. lightly fry in butt and garlic.)
Whilst this is happening on the back of the stove, slice, wash and fry 1 leek in butter. When the leek is getting soft, add diced mushrooms, garlic, stock and thyme. When all this is totally cooked, turn off the heat and flake in your salmon.
In a separate bowl (thank you Martha), whisk (stir with fork) 5 eggs, 1 cup milk, and the feta. The feta is optional for strict paleo peeps, but takes this quiche from kumbaya to kowabunga. Add salt and pepper, don't hold back.
Grease a baking dish with more butter.
Put down a foundation layer of potatoes (or courgette/eggplant).
Next, layer the leek/salmon mix.
Drizzle on half of that eggy liquid.
Repeat: Potato. Veg. Egg.
Sprinkle your good old roasted sunflower seeds on top.
Cook that puppy on about 160deg celcius for about 20 minutes until firm to the touch and light brown on the outside, like a good man (oh Martha! Sorry couldn't resist).
How high maintenance is it: 3/10
Surprisingly low. Whip this up before your workout and love yourself later.
Is it worth it:If you want to make friends with someone, share this quiche with them.
Nutritional Benefits:
Mainly you are eating this becuase it is outrageously good tasting. But yes, it's good for you too.
